Quick Skillet Peach Cobbler

Ingredients

  • 2 1/2 pounds (1134g) ripe peaches, peeled and sliced
  • 1/4 cup (60g) packed brown sugar, divided
  • 3 tablespoons (24g) all-purpose flour, divided
  • 1 teaspoon vanilla extract
  • 1 cup (98g) old-fashioned oats
  • 1/4 cup (26g) chopped pecans
  • 1/4 teaspoon kosher salt
  • 1/4 teaspoon ground cinnamon
  • 2 tablespoons unsalted butter, melted

Directions

In a 10-inch ovenproof skillet, stir together peaches, 1 tablespoon sugar, 1 tablespoon flour and the vanilla. Cook over medium-low heat until the fruit is tender and juices are thickened about 7 minutes.

Preheat broiler to low. In a medium bowl, stir together the remaining 3 tablespoons sugar, remaining 2 tablespoons flour, oats, pecans, salt and cinnamon. Drizzle with butter and toss to coat. Sprinkle streusel mixture over peach mixture. Broil 6 inches from heat until lightly browned and toasted on top, 3–4 minutes.
