Curried Cauliflower Soup With Pistachios

Cauliflower is a nutrition powerhouse, and takes on a golden glow thanks to the addition of antioxidant-rich, health-promoting turmeric, ginger, cumin and cayenne pepper. Once pureed, the vegetables are deceptively creamy and lush, just like the creamy soup you love (only healthier).
