“Creamy” usually means unhealthy, but that’s not the case for this delicious and filling soup. Coconut milk provides the creaminess, while whole tomatoes and dried herbs add incredible flavor. Pair with a grilled cheese or whole wheat crackers for a perfectly satisfying meal.

Creamy Tomato Soup

Ingredients

  • 1 tablespoon Garden of Life coconut oil
  • 1 tablespoon olive oil
  • 1 cup diced red onion
  • 3 garlic cloves, chopped
  • 1 can (28 ounces) whole tomatoes
  • 1 cup vegetable broth
  • 1/2 teaspoon sea salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1 cup coconut milk

Directions

Heat a large pot to medium high and pour in coconut oil and olive oil. Add onion and garlic and cook for about 8 minutes, stirring frequently. Add the tomatoes and vegetable broth. Use the back of a wooden spoon to smash the tomatoes in the pot. Add salt, pepper and dried herbs, and bring to a boil. Let simmer for 10 minutes, then turn off heat. Let soup cool, add coconut milk and blend using an immersion blender or regular blender. If necessary, return soup to pot to keep warm. Top soup with fresh basil ribbons, cashew or vegan sour cream and pumpkin seeds.
