Coconut Panna Cotta With Roasted Strawberries

In This Article

Active time: 20 minutes                 Total time: About 4 hours

Panna cotta is a cold and refreshing Italian custard. This completely dairy-free version is made with full-fat coconut milk and topped with intensely juicy roasted strawberries. While you may be tempted to reach for a can of low-fat coconut milk, coconut cream is what gives this panna cotta all of its flavor.

Note: This dessert requires some advanced planning, but it’s surprisingly hands-off: Whip up the custard base before your guests arrive, then pop it in the fridge for the gelatin to set. When it’s time to serve dessert, the panna cotta will be thick and creamy and ready to eat.

  1. The recipe states each serving is 250 calories, but logging it into MFP takes it to 370. That’s a big difference. Which is accurate and why the disparity?
