A twist on traditional guacamole, this dip is filled with fiber-rich black beans and protein-packed Greek yogurt, plus heart-healthy fats from the avocados. Dip a few tortilla chips or fresh veggies into this hearty guac for a delicious and satisfying snack.

Ingredients

  • 2 medium Avocados
  • 1 cup Black Beans, cooked
  • 1/3 cup plain Greek Yogurt
  • juice from 1 Lemon
  • 1/2 cup Red Onion, diced
  • 1/2 cup Tomato, diced (~ 1 medium)
  • 1 Jalapeno, minced
  • 2-4 tablespoons fresh Cilantro, minced

Directions

Place the black beans in a small food processor and pulse several times. Add one of the avocados and the lemon juice and pulse until well mixed.

In a small bowl, smash the remaining avocado with a fork. Stir in the greek yogurt. Add the black bean mixture, along with the onion, tomato, jalapeno and cilantro.

Mix well and serve with tortilla chips and/or fresh veggies.
