Spice up your daily breakfast grind with Fit Foodie Finds‘ recipe for baked oatmeal. It’s topped with a cinnamon leche sauce for a slightly sweet and satisfying bowl of oats. Each cup of baked oatmeal is full of fiber, with flavors that you’ll start to crave. The dish is made with unsweetened almond milk but you can also use any kind of milk. Pomegranate seeds make a beautiful garnish or you can try coconut flakes or slivered almonds.

Apple Cinnamon Baked Oatmeal

Ingredients

For the oatmeal:

  • 1 1/2 cups uncooked oatmeal
  • 1 3/4 cups unsweetened almond milk
  • 1 large apple (any type), peeled finely chopped
  • 1.5 teaspoons ground cinnamon
  • 1 teaspoon vanilla
  • Pinch of salt
  • 1 egg white
  • 1/4 cup pomegranate seeds

For the leche sauce (4 servings):

  • 8 tablespoons Greek yogurt low fat 2%
  • 4 tablespoons almond milk
  • 1 teaspoon cinnamon
  • 2 teaspoons honey

Directions

Preheat oven to 350ºF then spray a medium-size baking dish with nonstick cooking spray.

Place all ingredients for baked oatmeal, except the pomegranate, in a large bowl and mix. Transfer into baking dish. Bake at 350 for about 30 minutes or until the top begins to brown. It is now ready to serve.

Mix all ingredients for leche sauce and spoon over the baked cinnamon.
