Easy Turkey-Stuffed Peppers
Ingredients:
- 1 pound (450g) lean ground turkey
- 1 cup (185g) brown rice, cooked
- 1 15-ounce can (445g) Italian-seasoned diced tomatoes
- 4 bell peppers, seeds and tops removed
- 1/2 cup (45g) cheddar cheese, shredded
Directions:
Preheat the oven to 375°F (190ºC). In a skillet, cook turkey over medium-high heat until browned. Add brown rice and tomatoes and heat until slightly thickened. Divide mixture evenly between bell peppers and place in a square baking dish. Cover with foil and bake for 25 minutes. Remove foil, sprinkle cheese over the top and bake another 5 minutes or until cheese is melted.
