Stay calm on hectic mornings with Cooking Light’s nutty, chocolatey banana oatmeal. Oats and bananas are both high in soluble fiber, which slows digestion and keeps you fuller for longer. As if this breakfast couldn’t get any better, rich dark chocolate shavings add a decadent finish!

Sunflower Seed Butter Banana Chocolate Oatmeal

Ingredients

  • 3/4 cup water
  • 1/2 cup old-fashioned oats (certified gluten-free if necessary)
  • Dash of salt
  • 1/2 large ripe banana
  • 1 tablespoon sunflower seed butter
  • 2 teaspoons brown sugar
  • 1 tablespoon shaved dark chocolate

Directions

Bring water to a boil in a medium saucepan. Stir in oats and dash of salt. Reduce heat; simmer 5 minutes, stirring occasionally. Slice banana. Mash 1/3 of the slices in a small bowl. Stir sunflower seed butter, brown sugar and mashed banana into warm oatmeal. Top with remaining banana slices and shaved chocolate.
