Strawberries & Cream Oatmeal
- 2 cups (180g) rolled oats (certified gluten-free if necessary)
- 2 cups (300g) strawberries, chopped
- 2 tablespoons chia seeds
- 1 medium banana, mashed
- 1 teaspoon vanilla extract
- 4 cups (950 ml) unsweetened almond milk
- 2 tablespoons maple syrup
Place all ingredients in a medium saucepan. Turn to medium-high heat, and bring to a boil. Then, reduce heat to medium, and let cook until thick and creamy (about 7 minutes), stirring often. Remove from heat, and serve immediately.
