Who says side dishes can’t be the star of the show? This brown rice recipe combines the spice of green chili peppers and red chili powder with the freshness of ripe tomatoes to create a perfectly delicious side dish.
Rice with Tomato and Oats
Ingredients
- 3/4 cup (75g) Quaker Oats, roasted
- 1/2 cup (50g) uncooked brown rice
- 1 tablespoon red chili powder
- 2 large tomatoes, finely chopped
- 2 medium tomatoes, cut into large pieces
- 2 green chili peppers, sliced
- 2 tablespoons lemon juice
- Salt to taste
Directions
Cook rice according to package until it turns tender yet firm. Drain water and set rice aside to cool.
Heat a bit of oil in a pan and add the chopped tomatoes; cook for 4–5 minutes. Add salt, red chili powder and green chilies; cook for 1–2 minutes.
Add roasted oats and combine ingredients, mixing for 1–2 minutes.
Add cooked rice and lemon juice to the pan and mix lightly. Divide into bowls and serve hot.
