Cool off with a sweet, pink pop and feel good about sharing one with your kids, too. These pops are mostly antioxidant-rich raspberries and creamy, protein-packed yogurt, so they are a healthy snack. Adding the contents of a capsule of probiotic powder may help seed more beneficial bacteria in your system, in a delicious pop.
Raspberry Frozen Yogurt Pops
Ingredients
- 1 cup (227g) Greek yogurt
- 1/4 cup (60ml) maple syrup
- 10 ounces (280g) frozen raspberries
- 1 medium ripe banana
- 1 capsule acidophilus or other probiotic powder
Directions
Make space in your freezer for your pop molds to stand upright while they freeze. If you don’t have molds, place small 2-ounce paper cups on a sheet pan, and have popsicle sticks ready to go.
In a powerful blender, combine the yogurt, maple syrup, raspberries and banana. Open the acidophilus capsule and empty the powder into the blender.
Secure the lid (inserting the tamper, if you have one) and blend until smooth. Measure 1/4-cup portions into each mold or cup. The mixture should be thick enough to hold a stick upright. If not, freeze for one hour before inserting sticks.
When firm, transfer the pops to a zip-top bag or container and keep in the freezer for up to a month.
