Fresh and ground ginger with the pears make this your go-to dessert if you love its punchy, bright flavor. For even more zing, add the optional crystallized ginger to the topping. Use any ripe, still firm, pears you like, such as Bosc pears — just know Barlett pears are likely to lose their shape when cooked. The extra fiber in this dessert helps a small slice go a long way.

Pear-Ginger Crisp

Ingredients

For the filling:

  • 6 pears, peeled, cored and cut into 1/2-inch chunks
  • 1/3 cup (65g) brown sugar
  • 1 teaspoon fresh ginger, grated
  • 1/2 teaspoon ground ginger
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon salt

For the topping:

  • 1 cup (90g) rolled oats
  • 1/3 cup (65g) brown sugar
  • 1/4 cup (30g) whole-wheat pastry flour
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 1/4 cup (30g) butter, cut into small pieces
  • 3 tablespoons (40g) crystallized ginger, chopped (optional)

Directions

Preheat oven to 350°F (175°C). Add filling ingredients to a medium baking dish and toss to combine. The sugar will start turning the pears juicy. Set aside.

In a medium bowl, combine the oats, brown sugar, flour, cinnamon and salt. Add the butter and use a fork or your fingers to work it into the dry ingredients. Stir in the crystallized ginger, if using. Drop the mixture by even spoonfuls over the pears.

Bake until the mixture bubbles in the middle and the topping is evenly browned, about 45 minutes.
