Peanut Butter & Fruit Overnight Oats

    The problem I have is that these foods contain harmful plant lectins. Let’s start with peanut butter, peanuts are not nuts but beans, these beans contain harmful proteins called lectins that our microbiome has not adapted to. That is why so many people are allergic to peanuts. An alternative would be almond or walnut nut butter. Oatmeal made from oats is a new world grain that is also full of harmful lectins. An alternative is either millet or sorghum grains. Low fat milk is another problem if the milk comes from standard Holstein (Black and White cows) which contain the casein A-1 protein. When humans consume it the protein converts to beta-casa-morphin, a harmful lectin that disrupt the gut microbe which could lead to leaky gut and type 1 diabetes in some people. A simple replacement would be unsweetened coconut milk. The fruit should be eaten in moderation and only in season to prevent receiving too much fructose which encourages fat storage. All fruit should also be organic to avoid herbicides such as Roundup which contain glysophate a microbiome disrupting chemical. Now you have a safe/healthy meal.
