Take a sweet sip of eggnog without the sugar crash by making this recipe for morning eggnog oatmeal from Elle Penner. Old-fashioned oats are simmered in creamy milk and eggnog then topped with spicy cinnamon and fruits and nuts of your choice. Double, triple or quadruple the recipe to serve as a merry holiday breakfast for family and friends.

Make Your Breakfast Festive with Morning Eggnog Oatmeal

Ingredients

  • 1/2 cup uncooked old-fashioned oats (certified gluten-free if necessary)
  • 2/3 cup reduced fat milk
  • 1/3 cup light eggnog (such as 40% reduced fat)

Optional toppings

  • Cinnamon
  • Raisins
  • Sliced banana
  • Chopped nuts

Directions

In a medium saucepan over low heat, combine oats, milk and eggnog. Cover and slowly bring to a simmer, stirring occasionally until until oats are desired consistency, approximately 10-12 minutes for the creamier version pictured. Should the liquid begin to bubble up, simply crack the lid just a little bit.

Top with a dash of cinnamon, raisins, sliced bananas an/or chopped nuts of choice (optional).
