This light and lemony one-pan chicken dinner features convenient frozen artichoke hearts. (Pro tip: Don’t substitute jarred marinated artichokes, they are usually packed in flavored oil that overwhelms the delicate dish.)

Eating lemon slices may seem unusual, but when sliced thinly they nearly melt and add a piquant counterpoint to the velvety sauce. Large, bright green Castelvetrano olives add a fruity punch and are less salty than pimento-stuffed olives, look for them in grocery store olive bars or in jars.
