Combining two classic childhood favorites into one delicious hybrid sandwich is a brilliant move by Healthy Nibbles & Bits. Adults will appreciate that this comforting panini, made with peanut butter, jelly and brie cheese, clocks in at 300 calories per sandwich.

Ingredients

  • 4 slices of bread
  • 2 tablespoons (30 ml) peanut butter
  • 1 tablespoons (15 ml) jam or jelly
  • 1/2 ounce (14g) brie cheese

Directions

Spread a layer of peanut butter on two slices of bread. Top with a layer of jam or jelly. Cut several slices of brie about 1/8- to 1/4-inch thick. Trim off the rind. Lay Brie atop the jam, adding enough Brie to cover the bread. Top with the other slice of bread and spray the outside of the sandwich with cooking spray.

Using a grill pan or a skillet, toast both sides of the sandwich for about 2 minutes, until the bread is browned and the cheese melts.
