Making homemade pudding just got way easier, and it even fits with your healthy-eating plan. Super simple and easy, this is just your stand-by, high-protein Greek yogurt, mixed with melted dark chocolate. This is a great dessert because it has little added sugar, plus you get a serving of fruit, some probiotics and a healthy dose of fiber to satisfy that sweet tooth.
Dark Chocolate Yogurt Pudding
Ingredients
- 1 cup (240ml) 0% plain Greek yogurt
- 1 teaspoon vanilla
- 3 ounces (85g) dark chocolate, chopped
- 1 medium banana, sliced
- 1 cup (125g) fresh raspberries
Directions
Put the yogurt in a medium bowl and stir in the vanilla. Let it sit at room temperature for about 15 minutes.
Place the chopped chocolate in a bowl and microwave on high for 1 minute, then stir. Continue to microwave in 30-second intervals, stirring in between, until the chocolate is melted.
Quickly scrape the chocolate into the bowl with the yogurt and stir, before the chocolate hardens.
Using three wine glasses or small bowls, place 1/3 of the sliced banana in the bottom, then measure a heaping 1/3 cup of the yogurt mixture and place on the slices. Top with 1/3 cup raspberries. Serve, or cover tightly and refrigerate until time to serve, up to 2 days.
