These overnight oats are based off an indulgent, much-loved dessert: tres leches cake. The oats steep in milk, almond milk and coconut milk and are then topped with toasted coconut and fresh berries for a delicious breakfast that’ll satisfy any sweet tooth without the guilt.
Coconut Tres Leches Overnight Oats
Ingredients
- 1/3 cup unsweetened vanilla almond milk
- 1/3 cup unsweetened coconut milk
- 1/3 cup 2% milk
- 1 teaspoon honey
- 1 cup Quaker Oats
- 2 tablespoons unsweetened coconut flakes + more for garnish/serving
- Optional: fresh berries for garnish
Directions
In a medium-sized bowl, mix together the three milks and honey, then add the oats and unsweetened coconut. Stir to combine. Dish evenly into two jars or bowls, cover and let sit in the refrigerator for at least 5 hours and up to 4 days.
Serve the oats cold, topped with reserved coconut flakes and fresh berries, if desired.
