This delicious recipe from Love & Zest upgrades traditional broccoli salad with a creamy avocado and tangy citrus dressing. It’s ready in just 30 minutes and makes the perfect side dish for a cookout, dinner party or weeknight meal — with just 276 calories per serving.

Broccoli Citrus Salad

Ingredients

  • 6 slices thick-cut bacon
  • 4 cups (600g) broccoli florets
  • 1/2 cup (75g) avocado, diced
  • 3/4 cup (110g) red onion, diced
  • 1/4 cup (40g) dried tart cherries or raisins
  • 1/4 cup (40g) pecans, roughly chopped

For the dressing:

  • 1/3 cup (77g) mayo
  • 1/3 cup (80ml) 100% orange juice
  • 1 1/2 tablespoons honey
  • 1 1/2 tablespoons ground Dijon mustard
  • Salt and pepper, to taste

Directions

Preheat oven to 400°F (204°C). Line a baking sheet with parchment paper; arrange bacon evenly spaced on the baking sheet. Bake for about 25 minutes until fully cooked and crispy. Remove bacon from pan and drain on paper towels soaking up any drippings. Once the bacon has cooled, roughly chop, then set aside.

In a large bowl, mix together broccoli, avocado, onion and raisins.

In a small bowl, whisk together mayo, orange juice, honey, mustard and salt and pepper.

Pour dressing over broccoli mixture and toss to coat. Garnish salad with bacon and pecans. Serve at room temperature or slightly chilled.
