These treats might be mini in size, but they’re big on flavor, putting blueberry goodness in the spotlight. Some of the berries are pureed and microwaved with cornstarch to form a thick sauce that coats more fresh, juicy berries to pile into phyllo shells. A topping of honey-lemon yogurt adds creamy richness.

This light dessert dresses up a half-serving of fruit, making it a fun way to have a healthy dessert.

Blueberry Phyllo Pie Bites

Ingredients

  • 15 frozen mini phyllo shells (1 54g box)
  • 1 1/2 cups (175g) fresh blueberries, divided
  • 3 teaspoons honey, divided
  • 1 teaspoon cornstarch
  • 1/3 cup (85g) plain fat-free Greek yogurt
  • 1/2 teaspoon grated lemon zest

Directions

Preheat oven to 400°F (200ºC). Arrange frozen phyllo shells on a small sheet pan. Bake until browned and crisp, 3–4 minutes.

In a small blender or food processor, process 1/2 cup blueberries until pureed. Spoon into a medium microwave-safe bowl. Stir in 2 teaspoons honey and cornstarch. Microwave on High until bubbly and thick, about 1 minute. Stir in remaining 1 cup blueberries. Spoon blueberry mixture evenly into the phyllo shells, about 1 tablespoon each.

In a small bowl, combine yogurt, lemon zest, and remaining 1 teaspoon honey. Dollop evenly over pie bites, about 1 teaspoon each.
