Buy full-sized sheets of phyllo, or if you buy the package with two rolls of half-sized sheets, use 10 sheets. Thaw the dough in the refrigerator overnight, so it will be more supple to work with.
As far as desserts go, this is a great option because it’s fruit-based, contains 3g of fiber, and is an overall light and indulgent dessert. To cut down on sugar, use plain Greek yogurt, and add a dash of vanilla extract.

Apple Tartlets in Phyllo Nests Ingredients Directions Thaw the phyllo overnight in the refrigerator. Preheat the oven to 375ºF (190ºC). Unroll the phyllo, take out 5 sheets and roll them up into a cylinder and set aside. Roll up the remaining phyllo, wrap tightly and re-freeze. Using a sharp chef’s knife, cut the reserved sheets in thin slices, less than 1/4-inch wide. Divide the pile into 6 portions. Spray each pile of phyllo for 2 seconds with olive oil spray, using your fingers to gently lift and fluff the strips. Coat a sheet pan with cooking spray, then form each pile into 4–5-inch wide nest. Form a raised edge and tuck any stray strips under the edges. Sprinkle each nest with 1 teaspoon of raw sugar. Bake for 15 minutes or until golden and crisp. Peel, vertically quarter, and thinly slice apples, then chop the slices into 1/2-inch pieces. You should have about 4 1/2 cups chopped apples. In a large saute pan, place 1 tablespoon of water and set heat to high. Add the apples and stir until the water is bubbling, then reduce to medium. Sprinkle with cinnamon. Stir frequently, adding water 1 tablespoon at a time as the pan becomes dry. Cook for 5 minutes, until the apples are softened. Drizzle in the maple syrup and stir for about 2 minutes, until the maple coats the apples. Remove from heat and cool. You’ll be left with about 2 cups. Spoon 1/3-cup measures of apple filling into each nest just before serving. Garnish with 1 tablespoon yogurt.
