Apple Tartlets in Phyllo Nests

These little pies are a showstopper, with a crunchy golden nest of phyllo, filled with tender, cinnamon-laced apples, topped with a dollop of vanilla yogurt. Buy full-sized sheets of phyllo, or if you buy the package with two rolls of half-sized sheets, use 10 sheets. Thaw the dough in the refrigerator overnight, so it will be more supple to work with.

As far as desserts go, this is a great option because it’s fruit-based, contains 3g of fiber, and is an overall light and indulgent dessert. To cut down on sugar, use plain Greek yogurt, and add a dash of vanilla extract.
