Power Greens Breakfast Skillet
Ingredients
- 1 medium yellow onion, sliced thin
- 1 tablespoon (15 ml) butter (or olive oil)
- 4 cups (960 ml) assorted greens like kale, spinach, baby swiss chard (chopped if not baby greens)
- 3 eggs
- 3 tablespoons (45 ml) freshly grated Parmesan cheese
- pinch of salt & fresh cracked pepper
Directions
In a medium size cast iron skillet, melt butter over medium to medium-low heat. Add onion, stir to coat. Allow at least 30 minutes for the onions to caramelize. Stir every so often so the onions don’t burn. They will be done when they have a deep brown color.
When onions are done, set the oven broiler to Low and move the rack to the middle if it’s not there already. Add greens to the skillet and continue to cook on the stove until wilted. The amount of time will vary depending on the type of greens you use. Form 3 wells for the eggs. Crack one egg into each well and cook for 3-4 minutes until whites start to set. Sprinkle with cheese before transferring to oven and broil eggs until they are cooked to your liking.
Note: Caramelize extra onions to make another skillet later in the week. Use 1 tablespoon of butter or olive oil per onion. Leftover onions should keep in the refrigerator for up to 5-7 days.

Looks great, I’d eat the whole thing! I have one problem however. I don’t see how it is 570 calories. Three eggs are only about 210. Where are the other 360 calories? Butter and cheese maybe 200, veggies hardly worth tracking.
No idea where these numbers come from either, highly misleading.
I just entered the ingredients individually, onions 46, butter 194,cheese 65, veg 28, eggs 194. Total 435, each helping 217.50 calories, 9 carb, 14.50 fat and 13.50 protein.
1 c kale = 30 calories, 1c spinach= 7. so, it depends

I agree – one egg could b 80-90 calories, onions and greens pretty much zero – does the butter or EVOO and Parm chz make it that much more caloric? Not too many calories in the grated Parmesan cheese that comes in the sprinkle can…..can get reduced fat.

I’ve done something similar but with greens and whatever veg I have on hand. I like zucchini & cabbage. I use a small amount of coconut oil instead of butter & add a tsp or 2 of turmeric. Then top with egg & sprinkle with China seeds. Caramelized onions are great, but so time consuming.
Love it! I’ve never tried it with kale but with spinach is great!

Just made this recipe this morning. Fantastic! If you use a 12 inch skillet, add more greens and you can add a 4th egg for the second person.

I wouldn’t call 21 g low carb!
It’s not really 21 carbs. The numbers are way off. Try putting items in separately and you’ll see a big difference.

Just made this for breakfast and I’ve got to say this is an absolute winner! I used a bundle of chard and cut the eggs down to two ( I shared with my boyfriend :333 ) and we both fell in love with it. Will definitely be making again!

i tried it today and it was really good! even my husband who isn’t a big fan of greens liked it
sounds good but recipes that artificially lower calories like this annoy me, nobody is going to cook 3 eggs for 2 people, the real calorie should be with 2 eggs and 359 calories per serving
DELICIOUS!!! BEST MEAL EVER, I make it with 1 or 2 eggs, cook up the onions and spinach and added mushrooms. I store them each in their own containers and have my brunch meal all ready to set up, just add the eggs. This is the best meal EVER.
Making this right now; added baby bell 5 mushrooms to onion sautée. Cannot wait to dive in. I am adding a dash of hot sauce on those eggs 🙂

I make something similar with spring onions and watercress as well as baby spinach, any leafy green will do really.
Sounds delicious. That cholesterol count can’t be correct though. One large egg has about 170 mg to 213 mg of cholesterol. Three eggs at 271 mg?? Hmm!
I don’t understand the recipe? Are you cooking this in the oven or on the stove? These two sentences are contradictory: “set the OVEN broiler to Low and move the rack to the middle if it’s not there already. Add greens to the skillet and continue to cook on the STOVE”.
So are the onions cooking in the OVEN and the greens are cooking separately on the STOVE? or are they both cooking together?
