  2. Looks great, I’d eat the whole thing! I have one problem however. I don’t see how it is 570 calories. Three eggs are only about 210. Where are the other 360 calories? Butter and cheese maybe 200, veggies hardly worth tracking.

    1. No idea where these numbers come from either, highly misleading.

      I just entered the ingredients individually, onions 46, butter 194,cheese 65, veg 28, eggs 194. Total 435, each helping 217.50 calories, 9 carb, 14.50 fat and 13.50 protein.

    2. I agree – one egg could b 80-90 calories, onions and greens pretty much zero – does the butter or EVOO and Parm chz make it that much more caloric? Not too many calories in the grated Parmesan cheese that comes in the sprinkle can…..can get reduced fat.

  10. I’ve done something similar but with greens and whatever veg I have on hand. I like zucchini & cabbage. I use a small amount of coconut oil instead of butter & add a tsp or 2 of turmeric. Then top with egg & sprinkle with China seeds. Caramelized onions are great, but so time consuming.

  15. Just made this recipe this morning. Fantastic! If you use a 12 inch skillet, add more greens and you can add a 4th egg for the second person.

    1. It’s not really 21 carbs. The numbers are way off. Try putting items in separately and you’ll see a big difference.

  19. Just made this for breakfast and I’ve got to say this is an absolute winner! I used a bundle of chard and cut the eggs down to two ( I shared with my boyfriend :333 ) and we both fell in love with it. Will definitely be making again!

  23. sounds good but recipes that artificially lower calories like this annoy me, nobody is going to cook 3 eggs for 2 people, the real calorie should be with 2 eggs and 359 calories per serving

  24. DELICIOUS!!! BEST MEAL EVER, I make it with 1 or 2 eggs, cook up the onions and spinach and added mushrooms. I store them each in their own containers and have my brunch meal all ready to set up, just add the eggs. This is the best meal EVER.

  25. Making this right now; added baby bell 5 mushrooms to onion sautée. Cannot wait to dive in. I am adding a dash of hot sauce on those eggs 🙂

  27. Sounds delicious. That cholesterol count can’t be correct though. One large egg has about 170 mg to 213 mg of cholesterol. Three eggs at 271 mg?? Hmm!

  28. I don’t understand the recipe? Are you cooking this in the oven or on the stove? These two sentences are contradictory: “set the OVEN broiler to Low and move the rack to the middle if it’s not there already. Add greens to the skillet and continue to cook on the STOVE”.
    So are the onions cooking in the OVEN and the greens are cooking separately on the STOVE? or are they both cooking together?
