This 20-minute recipe from Maebells makes for an easy weeknight meal that’s light on dirty dishes. To boost the antioxidant quotient and add a pop of color, layer with chopped tomatoes, peppers and green onions.

Ingredients

  • 1 pound (453 grams) ground beef
  • 1 15-ounce (425 gram) can black beans, rinsed and drained
  • 1 recipe Homemade Enchilada Sauce
  • 6 corn tortillas, cut in half then sliced into thin strips
  • 1 cup cheddar cheese, grated

Directions

Brown ground beef in a large skillet over medium heat. Drain off grease.

Add the rinsed and drained black beans and homemade enchilada sauce ingredients. Enchilada sauce can be made right in the pan; no need to whip it up separately.

Stir mixture well, cover and reduce heat to low. Let simmer for 10 minutes.

Add sliced tortilla strips, stir well, top with cheese and cover. Let mixture simmer 5–10 more minutes until cheese is melted.
